Beach Bag Para-Professional Gift
Today was the last day of Kindergarten for the 2013-2014 school year and, once again, Mrs. B. gave me a very thoughtful gift. When I count my blessings, working with her is right up there on the top of my list. She is a wonderful teacher and great example to me, as well as the children.
Jakob is a child with special needs and was in our classroom the entire year. Mrs. B. wanted to include his name in the poem, because Jakob, like Cody, is very routine oriented. He made sure Mrs. B. and I did everything just right. That included saying "Good morning, Mrs. Lancaster!" as part of the morning calendar.
Here's a peek inside the bag. There is a beach towel, ball, bubbles galore and a couple of drinks. Mrs. B. knows how much I love my grandsons. I probably talk about them too much, but I can't help it. They are the little loves of my life. :)

Cooling Off a Hot Dog
It's blasted hot here and Don is going to great lengths to keep our dog cool.
He hosed her down, moved things around on the patio, found a fan and an old water mister in our garage and rigged it up to blow on her. Now, that is love!

Raspberry Sherbet Dessert

Ingredients:
2 cups Mother's Coconut Cookies (the long, washboard type)
1 Cool Whip- 16 ounce
1 cup chopped pecans or walnuts
1/2 gallon raspberry sherbet (or flavor of choice)
Directions:
Crumb cookies coarsely. Fold cookies and nuts into Cool Whip. Spread in a 9x13 pan. Freeze. Softened Sherbet and spread on top of frozen cool whip layer. Freeze. Serve with whipped cream. Garnish with cookies or fresh raspberries.
I made this for a baby shower and it was a huge hit. It's a perfect dessert for a hot summer day.

Chill Out and Sip on This
Easy Breezy Lemon Lime Squeezy
My favorite time to sip on this light, refreshing drink is in the evening, after I have had my fill of Diet Coke and/or Iced Tea for the day. You only need the following four ingredients and preferably an insulated cup:
Maraschino Cherries
Sprite or Sprite Zero
Lime
Crushed Ice
Squeeze 1/4 of the lime over the crushed ice. Add one Maraschino cherry and a tiny bit of the juice. Pour Sprite and enjoy.
Like I said...easy!

Zucchini Stuffing Bake
For those of you who grow your own vegetable gardens, it's time to start thinking about what to do with massive amounts of zucchini. Baking this Creamy Zucchini Casserole is a tasty option and a seasonal favorite of my family.
There are two things to remember when it comes to zucchini-
1. Pick them young and tender.
2. Pick them often. Monster sized zucchini are edible, but not nearly as palatable.
Saute in olive oil-
2 medium zucchini, chopped
2 green onions, chopped
Add-
Microwave-
1 box Stove Top Chicken Flavored Stuffing according to package directions.
Place 1/2 of the stuffing into a small, lightly buttered baking dish. Add zucchini mixture, then top with the remaining stuffing.

1 can Cream of Chicken soup
1/2 cup sour creamMicrowave-
1 box Stove Top Chicken Flavored Stuffing according to package directions.
Place 1/2 of the stuffing into a small, lightly buttered baking dish. Add zucchini mixture, then top with the remaining stuffing.
Bake at 350* for 25-30 minutes.
Enjoy.
